Some change in your parathas is always welcomed in the family ... Usual parathas are aaloo(potato) , gobi(cauli flower) , carrot parathas...
The main recipe is the same , just change the main ingredient and you will have a new paratha in your plate. I am giving here the recipe for Peas parathas. Here it goes...
Stuffing:-
Peas - 2 cups (Boiled and mashed) - change this ingredient for any other paratha
Onion - 1 large - chopped finely
Green chilly - 1 or 2 depending on your taste - finely chopped
Chat masala - 1/2 tbsp (Optional)
Cumin powder - 1/2 tsp
Salt - as per your taste
Lemon juice - 1 tsp
Corriander leaves - some
Paratha:-
Whole wheat flour 2 cups
Salt Little (1/2 tsp)
Water to knead the dough
Oil 1 tbsp
Mix the whole wheat flour,salt and Oil properly. Then knead the dough using the water. And keep this dough aside.
Now to make the stuffing, add all the ingredients mentioned above. If the stuffing seems very loose or watery, add some Mashed boiled potato in it.
Now divide the dough in 4 equal parts. Roll it to a small round shape( 1/2 inch dia ). Now put some stuffing in the middle of the rolled dough and gather the dough circle up around the filling, drawing the dough up to a sealed point at the top. Fold over the point and flatten the dough into a thick patty. Roll out carefully until about 1/4 inch thick and 6 1/2" wide.
To sauté the paratha, preheat a frying pan on medium-high heat. Add 1 teaspoon oil for the first paratha only. Put in one paratha and paint the top surface with about 1/4 teaspoon oil. Flip and paint the second side. Continue to flip the paratha frequently, pressing with a spatula on any unbrowned areas until browned all over on both sides. Remove from the pan and repeat with the other parathas until all are cooked. Serve topped with ghee or plain yogurt or pickel.

I usually love aaloo paratha but this time my peas paratha was better than aaloo ... ;)
